Vegan Pesto Pasta Recipe: A Delicious and Healthy Dish

INGREDIENTS
  • ½ cup vegan pesto
  • 6 oz. spaghetti
  • 2-3 pinches Red pepper flakes
  • 1 tbsp. Extra-virgin olive oil
  • 2 tbsp. pine nuts
  • 4 cups Arugula 
  • ¼ cup freshly grated vegan Parmesan
  • ½ tbsp. salt & Pepper (or to taste)
  • 1 tbsp. Fresh Lemon Juice
  • 2 cups water 
Vegan Pesto Pasta Recipe
INSTRUCTIONS
  1. Take a large pot and add water and salt as required. Cook the pasta as per the package directions. Once the pasta is cooked, take out a half cup of starchy water for later use. Drain the remaining water and toss the pasta with olive oil.
  2. Now, take a large skillet and heat it. Lower the flame, add pesto and half of the reserved pasta water and stir well to combine. Add the cooked pasta and toss well to coat. Add more pasta water if required just enough to create a loose sauce. 
  3. Put off the flame and add salt, pepper, and lemon juice according to your taste. Add Arugula and let it wilt a bit with the inside heat of pasta. Sprinkle pine nuts and red pepper flakes before serving.
NOTES
  • You are at the liberty to garnish your dish with roasted cherry tomatoes or arugula as well. 
  • If you run out of pine nuts, you can also use some walnuts or almonds.
  • If you like to add more cheese, stir in some balls of mozzarella.
